DineCDMX exists because we couldn't find a version of the Mexico City guide we actually wanted — one written by people who eat here every week, updated when things change, and honest about the difference between what's actually great and what's just well-marketed.

Elvin trained in the kitchen of Eleven Madison Park in New York under Chef Daniel Humm during its three-Michelin-star era. His career since has moved between fine-dining projects in New York, Copenhagen, and — for the last several years — Mexico City, where he sets the standard our answers are measured against.

Every restaurant, taquería, mezcalería, and hotel featured in this guide has been visited by Elvin or by a member of our team of local experience leaders and tastemakers working to his brief. Nothing is included based on a press release.
